Banana Jam 3

10 ripe bananas |
4 tbsp lime juice |

1 cup orange juice |
3 cups sugar |

1 vanilla pod |
� tsp salt |
|
1 tbsp banana liqueur |
|
Peel and mash the bananas with a fork in a bowl with the orange and lime juice. Mix quickly so the banana does not discolor. break the vanilla pod into small pieces.
Add all the ingredients, except the banana liqueur, to a heavy bottomed saucepan and heat gently until all the sugar has dissolved. Raise the heat and bring to a boil. Reduce the heat and simmer for about
30 minutes or until the jam is thick. Stir in the banana liqueur and remove pan from the heat. Ladle into hot, pre - sterilized jars and seal. If required for longer storage, process in a boiling water bath for
10 minutes.
Makes about 1 litre/2 pints.
