Apple Conserve

This recipe works well with just about any fruit that is fairly firm, but especially with peaches, apricots, pears and crab apples.

2 cups apples, peeled and quartered 1 cup vinegar
6 whole cloves 1 stick  cinnamon
2 cups  sugar

Method :    In a saucepan, combine the sugar, vinegar and spices. Simmer until all the sugar is dissolved, and then bring to the boil. Boil for 5 minutes. Add the fruit and cook it until tender.

Pack in pre -  sterilized, hot jars, and fill to within a in  (6 mm) of the top with syrup. Seal when cold.
