Split Pea Soup


1 1/4 cup split peas
1 vegetable bouillon cube
2 quarts water
1 medium onion, chopped
2 medium carrots, chopped
salt, pepper, and margarine to taste

Bring all the ingredients to a boil, cover and simmer gently until vegetables are very soft, usually about 1.5-2 hours, stirring occasionally. Add salt and pepper to taste. May be served as is, or put through a blender and pureed.
