Potato Soup with Peppers


5 potatoes, washed and diced
3 cups water
1 Tbsp olive oil
1 large onion, chopped
3 garlic cloves, minced
1 red pepper, diced
1 tsp cumin
1 tsp dried basil
1/4 tsp black pepper
4-oz can green chili pepper or 1 yellow chili pepper, chopped
1.5 tsp salt
2 cups soymilk
2 green onions, sliced

In large pot, cook potatoes in water for 20 minutes or until soft. Mash potatoes in cooking water, leaving some chunks. Set aside.

In a smaller saucepan or frying pan, cook onion in oil for 5 minutes. Add garlic, red pepper, basil, cumin, pepper, and cook 5 minutes more. Add onion mixture as well as chili peppers, salt, and soymilk to potatoes; heat through but do not boil.

To garnish, sprinkle with green onions.
