Tom's Favorite Macaroni Salad
This salad is a favorite of my good friend Tom.
some macaroni noodles (about 1 or 2 cups)
some vegan mayonnaise
dill pickles, chopped (lots of these!)
carrots, chopped (optional)
salt
pepper
Cook the noodles in boiling water until done, about 7 minutes. Drain. Rinse thoroughly under cold water to cool them.
Mix together in a big bowl the cooked noodles, lots of vegan mayonnaise, the dill pickles, carrots, and generous amounts of salt and pepper.
Serve chilled.
Note: You may have to add more mayonnaise before re-serving because it tends to get a bit dry otherwise.
