Indian Mashed Potatoes


4 to 6 large potatoes, about 2 lbs
1/2 to 3/4 cup hot soymilk
1/4 to 1/3 cup melted margarine
1.5 tsp salt
black pepper
1 fresh hot green or yellow chili pepper, seeded and finely chopped
1 tsp garam masala
pinch of chili powder
1.5 Tbsp lemon juice

1. Peel potatoes and cut into small pieces. Place in a large saucepan with enough water to cover. Cover pan and bring to a boil. Then, reduce heat to medium-low and continue cooking, partially covered and at a gentle boil, until potatoes are very tender when pierced with a fork, about 20 minutes. Then, drain well.

2. Mash potatoes with a potato masher or a fork. Stir in soymilk and margarine. When blended, add salt, pepper, chili pepper, garam masala, chili powder, and lemon juice. Mix well.
