Zucchini Pancakes


1 medium zucchini (leave the skin on)
1 small onion
1/2 cup water
1 cup whole wheat pastry flour
1/2 tsp garlic powder
1 Tbsp parsley flakes
1 tsp tamari or soy sauce
2 tsps oil

Blend zucchini, onion, and water in food processor. Pour into bowl and add flour, garlic, parsley, and soy sauce. Form into small pancakes 1 or 2 at a time in an oiled frying pan and fry over medium heat. Brown both sides.

Good with ketchup on the side.
