Orange Poppy Seed Breakfast Pancakes


1 cup soymilk
2/3 cup water
1 cup whole wheat pastry flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup rolled oats
1/2 cup sunflower seeds, toasted
1/4 cup poppy seeds
1 tsp finely grated orange zest
Vegetable or canola oil

(1) Combine soymilk and water in a small bowl.
(2) Whisk the flour, baking powder, baking soda, and salt together in a large bowl. Add the oats, sunflower and poppy seeds, and orange zest. Add the soymilk mixture and stir to combine, using as few strokes as possible so you don't overmix the batter.
(4) Let sit for 5 minutes to allow the batter to thicken.
(5) Heat a frying pan over the burner at medium heat. Put about 1 tbsp of the oil onto the pan and fry the pancakes until bubbly on top, about 2 or 3 minutes, then flip them and cook the other side.

Delicious with maple syrup!
