Classic French Toast


Blend in a blender until smooth and creamy:
1 1/2 cups tofu (soft tofu works better than firm tofu -- the softer, the better)
1 1/2 tsp cinnamon
1/4 cup maple syrup
1 tsp salt
1/2 cup water
2 Tbsps oil

Pour into a shallow bowl.

Dip slices of bread in the batter, then fry in a hot frying pan with 1 Tbsp of oil for each side. Brown well on both sides. Serve with maple syrup.
