Classic Breakfast Pancakes


Mix thoroughly together:
2 cups white flour
1/2 cup cornmeal (if you don't have any, the recipe will still work.)
4 1/2 tsp baking powder
1 tsp salt
1/4 cup sugar (or add 1/4 cup maple syrup to wet ingredients)

Gently stir in with only a few strokes:
3 cups soymilk
2 Tbsp oil

Batter will be lumpy.

Fold in gently:
1/2 lb tofu, drained and well crumbled (soft tofu works better than firm)

Let batter sit while stove burner heats up. Fry on a lightly oiled frying pan and serve.

Delicious with maple syrup poured on top! or applesauce too.
