Oatmeal Carrot Muffins


1 cup soymilk
1 cup rolled oats
1/2 cup grated carrots
1/4 cup sugar
1/4 cup melted margarine
1 egg replacer
1 cup white flour
1/4 cup sugar
1 tbsp baking powder
1 tsp salt
1/2 tsp baking soda
1 cup raisins


1. In large bowl, pour soymilk over oats; stir to mix. Cover and let stand for 10 minutes.
2. Mix together carrots, sugar, oil, and egg replacer; stir into oat mixture.
3. In separate bowl, combine flour, sugar, baking powder, baking powder, and salt; stir in raisins. Stir into batter just until moistened.
4. Preheat oven to 400F. Lighly grease muffin pan with margarine or vegetable oil.
5. Spoon into muffin pan. Bake for 20-25 minutes or until tops are firm to the touch.
