Chocolate Chip Banana Muffins
2 cups white flour
2 tsps baking powder
1/2 tsp salt
1/2 cup margarine
3/4 cup sugar
2 egg replacers
1/2 cup soymilk
1 mashed banana
1/2 cup chocolate chips (try cutting them in half)
1 tsp sugar
1 tsp cinnamon
1. Mix flour, baking powder, and salt.
2. In a separate bowl, cream together the margarine and sugar; beat in the egg replacers one at a time. Add soymilk and mix. Add banana and chocolate chips and mix.
3. Combine the flour mixture with the banana mixture and stir.
4. Heat oven to 375F. Grease a muffin pan with margarine or vegetable oil.
5. Spoon batter into muffin pan.
6. Combine sugar and cinnamon; sprinkle on top of the muffins. Bake 20-25 minutes.
