Banana Raisin Oat Bran Muffins


1 egg replacer
1 cup soymilk
1 cup mashed ripe bananas (about 3 medium)
1/2 cup sugar
1/4 cup vegetable oil
1 tsp vanilla
1 cup white flour
1 cup oat bran or wheat bran
2/3 cup raisins
1 tsp baking soda
1 tsp baking powder


1. In bowl, combine egg replacer, soymilk, bananas, sugar, oil, and vanilla; mix well.
2. Preheat oven to 400F. Lightly grease a muffin pan with margarine or vegetable oil.
3. In another bowl, combine flour, bran, raisins, baking soda and baking powder; stir into banana mixture, only until combined.
4. Spoon into the muffin pan. Bake for 20-25 minutes or until tops are firm to the touch. Makes 15 muffins.
