Nacho Cheezy Sauce


This is wonderful on nachos -- Spread some nacho chips on a plate, drizzle with the cheezy sauce, and top with some salsa too. Zap in a microwave or in the oven for a minute or 2 for a nice snack.

2 cups water
1/3 cup nutritional yeast flakes
1/4 cup tahini
1/4 cup arrowroot powder or arrowroot flour
2 Tbsp lemon juice
1 Tbsp onion powder
1.5 tsp salt
(1 Tbsp jalapeno pepper, finely minced (optional)
(3 Tbsp red bell pepper, finely minced (optional)

Blend everything except the blenders in a blender or food processor.

Transfer to a sauce pan and whisk rapidly on high heat until mixture thickens. This should take just a few minutes. Careful not to let it burn.

Stir in peppers and pour into a small bowl or shallow dish and chill until ready to use.
