Chocolate Icing


1/2 cup sugar
1/2 cup cocoa powder
1/2 cup soymilk
1/2 tsp vanilla

In small saucepan, mix sugar with cocoa; whisk in soymilk until smooth. Over medium heat, bring to a simmer, stirring constantly. Continue stirring and cook for 2 minutes. Remove from heat; stir in vanilla. Let cool for 2 hours (icing thickens upon cooling). Spread over top of cake.
