Carob Brownies


It may take you a few bites to warm up to the carob flavour, but if you're like me, you'll be loving it in no time.

2 1/3 cups whole-wheat flour
1 cup water
1/2 cup margarine
2/3 cup carob powder
1 heaping Tbsp grain coffee if you have any (optional)
1.5 cups maple syrup
1 tsp vanilla
1/2 tsp salt
2.5 tsp baking powder

1. Preheat oven to 350F. Mix in 1/3 cup flour with 1 cup water. Cook in a saucepan until thick; cool completely.

2. Melt margarine and sift in carob powder and grain coffee. Whisk mixture thoroughly to avoid lumping. Cool.

3. Beat together maple syrup, flour and water mixture, and vanilla. Add to carob mixture.

4. Combine remaining 2 cups flour, salt, and baking powder. Add to above ingredients. Bake in 8-inch-square oiled pan for 35 minutes, or until inserted knife comes out clean. Allow to cool on a wire rack and cut into brownies.
