| Submitted by: Janice Capaldi June 2002 Ingredients: 1 1/3 C butter, softened 3/4 C sugar 1 egg 1 tsp grated lemon peel 1 Tbsp vanilla extract 2 1/2 C flour 1 1/2 C walnuts, finely ground 1 Tbsp ground cinnamon 1 C raspberry preserves 3 Tbsp powdered sugar Directions: Preheat oven to 350. Grease & flour a 9 x 13 baking pan. Beat butter, sugar & vanilla in large bowl until creamy Beat in egg and lemon peel until blended. Mix in flour, cinnamon & walnuts until blended Press 2/12 C of dough into bottom of prepared pan. Spread raspberry preserves over crust Press remaining dough, in small flat pieces - one piece at at time, evenly over preserves. Bake for 35-40 minutes, until golden. Cool in pan on wire rack Sprinkle with powdered sugar; cut into bars. |
