| Waffles |
| Submitted by: Laura Boeve November 2001 Ingredients: 2 eggs 2 C flour 1 3/4 cups milk 1/2 cup margarine or butter, melted or vegetable oil 4 teaspoons baking powder 1 tablespoon sugar Directions: Heat waffle iron. Beat eggs with hand beater until fluffy; beat in remaining ingredients just until smooth. Pour batter from cup or pitcher onto center of hot waffle iron. Bake until steaming stops, about 5 minutes. Remove waffle carefully. Three 10-inch waffles. Do-ahead tip: After baking, cool waffles and wrap individually in aluminum foil; freeze. (I make a triple batch on Sundays, and freeze the leftovers in a large ziploc bag. During the week, the kids take out what they want and pop it into the toaster!) Remove from foil and place on ungreased cookie sheet in 400* oven until hot, about 8 to 10 minutes. |
