| Submitted by: Jan McGrail October 2001 Ingredients: 4 Very Large Sweet Potatoes = 3 cups mashed Bake about 1 hour - peel & mash Combine: 1/4 C sugar 1/2 C melted margarine 2 well beaten eggs 1 tsp. vanilla 1/3 C evaporated milk Mix with potatoes Topping: 1/2 C brown sugar 2 1/2 tsp. margarine 1/4 C flour 1/2 C chopped pecans combine & sprinkle over casserole Bake at 350 degrees for 30 to 45 minutes. |
