| Submitted by: Vivian Siismets June 2002 Ingredients: 1 C flour 1 C cornmeal 2 Tbsp sugar 2 tsp baking powder 1/2 tsp baking soda 1/2 tsp salt 1 1/4 C buttermilk 3 Tbs canola oil 3 large egg whites 1 C frozen corn 1 10 oz. pkg. spinach, squeezed 1 jalapeno pepper, minced Directions: Combine dry ingredients in bowl. Combine wet ingredients in separate bowl. Combine both into one. Incorporate spinach and pepper. Bake in an 8 inch round cake pan coated with cooking spray. Bake at 375 for 35 minutes. Cool 10 minutes on rack. Invert onto dish and cut into wedges. |
