| Submitted by: Janice Capaldi December 2001 - Appetizers and Hors d'oeuvres Ingredients: 1 lb. fresh spinach, steamed & drained (use baby leaf, about 1 1/2 10 oz. packages) 1 Large onion, chopped 1 t rosemary, dried 1/4 C fresh parsley, chopped 1 C flour 1 t salt 1 t baking powder 2 eggs, beaten 1 C half & half 1/2 C butter (1 stick) melted 2 C cheddar cheese, shredded (8 oz.) 2-3 T sesame seeds (optional) Directions: Preheat oven to 350 degrees. Lightly grease a 9 x 13 baking pan. Steam spinach and drain, set aside. Saute onion in 1-2 T olive oil, and add to spinach. Stir in rosemary & chopped parsley. In a large bowl, mix flour, slat & baking powder. Stir in beaten eggs, half & half and melted butter. Stir in spinach/onion mixture. stir in the cheddar cheese. POur mixture into 9 x 13 pan. Sprinkle with sesame seeds. Bake for 45 minutes, or until golden brown. Remove from oven - let set for 15 minutes or so; cut into squares & serve. |
