Pumpkin Muffins

Ingredients:

1 C whole wheat flour
2/3 C white flour
1/2 C brown sugar
1/2 C white sugar
1 Tbsp pumpkin pie spice
1 tsp baking soda
1/4 tsp salt
2 egg whites
1 C pumpkin
1/2 C plain yogurt
1/2 C applesauce
1/4 C milk
                             
Directions:
Preheat oven to 350 degrees. Mix flours, sugars, pie spice, baking soda & salt in large bowl.  In another bowl. mix egg whites, pumpkin, yogurt, applesauce & milk.  Add to dry ingredients & mix until moistened.  Scoop into muffin tins and bake 20-25 minutes until springy.  Mini muffin tins require 15 minutes.
