| Submitted by: Vivian Siismets September 2001 Ingredients: Dressing: 6 Tbsp Olive Oil 1/2 C oil-packed sun-dried tomatoes, drained 1/4 C red wine vinegar 1 Tbsp drained capers 1 clove crushed garlic Salad: 1 Lb. Penne Pasta cooked & Drained 2 C halved cherry tomatoes 8 oz. fresh water packed mozzarella, drained and cut into 1/2 inch pieces. 1 C fresh basil leaves, chopped 1/2 C Parmesean Cheese 1/2 C Chopped black or Kalamta Olives Instructions: In food processor, make dressing by combining all dressing ingredients. Process until sun-dried tomatoes are coarsely chopped. Add dressing to pasta & toss to coat. Add tomatoes, mozzarella, basil, parmesean and olives. Season to taste with salt and pepper. Toss to mix and serve at room temperature. |
