Ingredients:

1/3 C Olive Oil
1 garlic clove - pressed
1 7 oz. jar roasted red peppers. drained
7 oz. feta cheese, crumbled (about 1  1/2 cups)
1 tsp cayenna pepper


Directions:
Heat oil in saucepan until hot. Remove from heat and stir in garlic.  Blend peppers, feta and cayenne pepper in food processor until combined.  With machine running, add garlic oil.  Blend until smooth.  Season with salt and pepper.  Chill until thickened, about 2 hrs.  Accompany with pita bread or crackers.
