Ingredients:
1lbs. meat
3 cups rice (rice must be soaked for 1-2 hours)
1 14 oz can chicken broth (use homemade if avail.)
� cup pine nuts

Non-Meat
Chop carrots, celery & onions.  Add frozen peas to the rice when finished cooking.


Directions:

Cook meat or vegetables. Season with salt, pepper and cinnamon. Add rice,   meat or vegetables and broth in a heavy pot.  Liquid should cover rice.  If not, add more broth/water.  Bring to a boil then cover and simmer until liquid is absorbed.  Simmer 30 minutes and turn off heat and rice will continue cooking in covered pot. (Cooking time is reduced from soaking the rice).
Brown pine nuts in a small amount of oil and stir frequently until lightly brown.   Mix pine nuts with rice and garnish the top of rice  w/cinnamon.
This is always a family favorite at Holidays.
