| Submitted by: Laura Boeve January 2002 Ingredients: 1 frozen deep dish pie crust 1 lg. onion 2 cloves garlic, peeled and sliced 2 T. olive oil 1/2 lb. cheddar 3eggs 1 c. cream 3/4 c. cooked broccoli salt and pepper Directions: Prick crust w/ fork, cover w/ tinfoil and bake at 450* for 8 minutes; remove tinfoil, prick again. bake 4 more minutes-cool.Saute sliced onions and garlic in oil. Place evenly over bottom of crust. Sprinkle on cheese. Beat eggs and cream; add salt and pepper and pour over cheese. Add broccoli and sprinkle cheese on top. Bake for 15 minutes at 450*-reduce heat to 350* and bake for 15 more minutes. I take tons of creative license with this recipe. I put in meat, use skim milk, more cheese, different kinds of cheese, more eggs, different veggies, whatever is in the fridge. It always works and people love it. |
