| Submitted by: Vivian Siismets February 2002 Ingredients: 4 C water 6 C Sliced Zucchini 1 pkg ground soy 2 garlic cloves, minced 2 C low fat spaghetti sauce 1/2 tsp salt 1/2 tsp dried basil 1/2 tsp dried oregano 2 C low fat cottage cheese 1 Tbsp dried parsley s Large eggs, lightly beaten cooking spray 1/2 C dry breadcrumbs 1 3/4 C mozzarella cheese, divided Directions: 1. Bring water to a boil in a saucepan. Add zucchini. Cook 3 minutes until crisp tender. Drain & cool. 2. Place soy in bowl. Add spaghetti sauce, salt, basil and oregano. 3. Combine cottage cheese, parsley and eggs in bowl. 4. Arrange zucchini slices in 3 qt. casserole sprayed with cooking spray. Sprinkle zucc. with 1/2 of the breadcrumbs, cover with 1/2 soy mixture and 1 C mozzarella. Repeat layers with remaining breadcrums, cottage cheese and soy. Bake at 350 for 30 minutes. Sprinkle with 3/4 C mozzarella and bake until it melts. |
