| Submitted by: Vivian Siismets August 2002 Ingredients: 2 26 oz tomatoes, canned,ground 2 cucumbers,peeled and chopped 8 oz green or yellow pepper,chopped 2 cloves garlic, emulsify with Italian dressing 1 TBS parsely,chopped fine Pinch pepper and salt 1 cup Wishbone Light Italian dressing Directions: Place garlic into blender or food processor with the dressing and emulsify until creamy. Add all of the above ingredients in a container and mix well. Set in refrigerator until well chilled. Add for garnish cucumber sticks and sour cream. Add a nice rustic bread to accompany and you have a healthy,filling dinner for a warm summer night. |
