| Submitted by: Laurie Persells April 2002 2� Cup Oat Bran cereal � Cup Brown Sugar 1 Tbs Baking Powder � Cup Evaporated skim milk or skim milk � Cup Canned frozen fruit juice, your choice, thawed � Cup Fresh or frozen fruit, your choice 2 Egg whites or � cup egg substitute 2 Tbs Vegetable oil (Or for a slightly nutty flavor use Flax Seed oil) Preheat the oven to 425 degrees. Mix the dry ingredients in a large bowl. Mix the milk, fruit juice, fruit, eggs, and oil in a bowl or blender. (Reserve 12 pieces of fruit to place on top of the muffins.) Combine with the dry ingredients and mix. Line muffin cups with paper baking cups and fill with batter. Place a piece of fruit on each. Bake for 17 minutes. Makes 12 muffins.
