| Submitted by: Vivian Siismets November 2001 - Foods that Freeze Well Ingredients: Chile Cheese Chowder 1 TBS olive oil 1 cups chopped carrots 2 cloves minced garlic 2 jalapeno peppers,seeded and chopped 1/2 tsp ground cumin 5 cups diced potatoes 2 16 oz. cans vegetable broth 1/2 tsp salt 1/3 cup flour 2 1/2 cups fat free milk 3/4 cups shredded pepper jack cheese 1/2 cup shredded reduced fat cheddar cheese 1. Heat oil in dutch oven. Add carrot and next 5 ingredients. Saute 10 minutes. Stir in broth, potatoes and salt. Bring to boil. Reduce heat and simmer until potatoes are tender. 2. Combine flour and milk in small bowl, stirring with a whisk. Add to pan. Cook over medium heat until thick, stirring constantly. Add cheeses, stir until melted. |
