| Submitted by: Toni Schweitzer February 2002 Ingredients: 2 C graham cracker crumbs 1/4 C butter or margarine, melted 3 8 oz. packages of cream cheese, softened 1 C sugar 4 eggs 1 tsp grated lemon peel 1 tsp vanilla dash salt Directions: 1. In a small bowl, combine crumbs and melted butter. Press firmly into bottom and 1.5 " up sides of 9" spring form pan. 2. Preheat oven to 325 degrees 3. In large bowl with mixer at medium speed, beat cream cheese until light & fluffy. Beat in 1 C sugar until well mixed. Beat in eggs, lemon peel, vanilla and salt until very smooth. Pour into crust. 4. Bake 1 hour or until center is just set. Cool on wire rack 20 minutes. Topping: 1 C sour Cream 1/4 C sugar 1/2 tsp vanilla In a small bowl, combine sour cream, sugar and vanilla. Mix well. Spread over cheesecake. Bake 10 minutes more. Cool on wire rack. Refrigerate at least 8 hours. |
