| Submitted by: Denise Palmer January 2003 Ingredients: 1 cup shredded sharp cheddar cheese 1 cup shredded Swiss cheese 1 pkg (8oz) light cream cheese 2 T chopped fresh chives (I substituted � T of dry basil) 2 teaspoon Worcestershire sauce � teaspoon paprika � teaspoon garlic powder � cup finely chopped pecans (I used small 1 � oz bag pecan chips) (I found this recipe in my new Kitchen Aid cookbook) Directions: Place all ingredients except pecans, in mixer bowl. Attach bowl and flat beater to mixer. Turn to speed 4 and beat for about 1 minute, or until well blended. On waxed paper, shape mixture into a ball. (I tried to make a football in celebration of Super Bowl 2003). Roll ball in chopped pecans. Wrap in waxed paper. Refrigerate until serving time. Serve with assorted crackers or raw vegetables. Per serving: About 65 cal, 4 g pro, 1 g carb, 5 g fat, 13 mg chol, 109 mg sod. |
