January 2002 - Tea Time

Ingredients:
Rolls:
3 1/2 C flour
1/4 C sugar
1 t salt
1 pkg yeast
1/2 C applesauce
1/2 C milk
1/4 C butter
1 egg


Caramel topping:
1/2 C packed brown sugar
1/2 C applesauce
3 T melted butter


Filling:
2 T butter softened
1/3 C sugar
1 t cinnamon


Directions:

In large bowl, combine 1 C flour, 1/4 C sugar, salt & yeast

In small sauce pan, combine 1.2 C applesauce, milk, and 1/4 C butter.  Cook until 120 degrees.  Add to flour mixture with egg and blend at low speed until dough forms

On floured surface, knead in an additional 1/2 to 3/4 C flour until dough is smooth.  Place dough in greased bowl and cover with plastic to rise for 1 hour.  Combine topping ingredients in pan, mix well, spread evenly in pan.

On lightly floured surface, roll dough to 15 x 12 rectangle.  Spread dough with 2 T butter. sprinkle sugar and cinnamon over butter.

Starting with the 15 inch side, roll up tightly, pinching edges to seal.  Cut roll into 12 slices, place cut side dwon over topping in pan.  Cover, refrigerate overnight, or at least 8 hrs.  Let stand at room temp. for 30 minutes.  Bake 25 minutes, cool in pan 1 minute, invert onto serving platter.  Serve warm.
