| Submitted by: Vivian Siismets February 2003 Ingredients: 1 can black beans 1 can Mexican style tomatoes 1 can corn 1 16 oz. jar salsa 1 tsp. cumin 1 tsp. red chili powder 1/2 tsp. crushed red pepper 8 oz shredded cheddar/jack cheese 4 large flour tortillas, cut into half moons Cook salsa, tomatoes, and spices in saucepan for 10 minutes. Add corn and black beans. Spread 1/3 tomato mixture on bottom of a 13x9 glass baking dish. Place 4 tortilla halves on top of tomatoes, flat side of tortilla touching edge of pan. Place 1/3 more of tomatoes on tortillas, then sprinkle 1/2 of cheese. Repeat with tortilla shells, tomatoes, then remaining cheese. Bake at 350 for 20 minutes or until tomatoes are bubbling and cheese is melted. |
