| Submitted by: Kelly Panoff September 2002 Ingredients: 8 Roma tomatoes, sliced into � inch slices 3 fresh mozzerella balls , sliced into � inch slices, that fit the tomatoes 1 LARGE bunch of fresh basil 4-5 TBS of a GOOD olive oil 2 cloves of garlic, peeled 2 TBS Kosher or sea salt 1 TBS black pepper Balsamic Vinegar to taste Directions: On a decorative platter, lay the tomato slices on the plate, place the mozzerella slices on top. Next, in a food processor, blend basil, garlic, olive oil, salt and pepper, and a FEW drops of balsamic vinegar together until smooth. It will be bright green. Spoon one dollop of mixture onto each tomato/cheese slice. Next, drizzle your Balsamic vinegar sparingly onto the platter as well. Chill, serve and enjoy! |
