Ingredients:

4 medium bananas
2/3 cup shortening
2/3 cup milk
3 eggs
1-2/3 cups sugar
2-1/3 cups flour
1-1/4 t baking soda
1-1/4 t baking powder
1/2 t salt
3/4 cup chopped nuts

Preheat oven to 350 degrees.  Prepare pan with shortening and flour or Baker's Joy.
Excluding the nuts, measure and place all ingredients into a large mixing bowl.
Beat on low speed for one minute then on high speed for two more minutes.
Add nuts last - stir in by hand.  These are optional and can be substituted with raisons

Baking options:
Two 8" pans  40-43 minutes
Two 9" pans 35-40 minutes
Bundt Pan 55 minutes
9" x 13" pan 45-50 minutes

Baking times will vary based on the oven and size of the bananas.  Use clean knife test and adjust as needed.
This is an extremely friendly recipe - it is forgiving if you don't measure exactly.
It turns out great and doesn't need frosting but if frosting is desired - cream cheese complements it well.

(My sister Cynthia baked this cake for me . . . It's my mom's recipe)
