| Submitted by: Denise Palmer March 2001 Ingredients: 1 slab Salmon (aprox. 2 lbs.) 1 large potato Sauce: � c whole grain mustard 1 T real mayonnaise (I used light) Mix together Lightly salt salmon and place on lightly oiled baking sheet. (tuck tail under) Spoon sauce on top of fish. Slice potatoes paper-thin and shingle them on top of fish (I used a mandolin). Generously brush oil on top of potatoes. Salt & pepper to taste. Bake 400 for 20 min, lower heat to 325 and bake for another 20 min. |
