Ingredients:
2 Flour Tortillas
1 very small, ripe avocado, peeled, pitted and thinly sliced
2 ounces thinly sliced queso blanco (mild, white mexican cheese)
1 Tbsp salsa, drained of liquid
1 tsp minced cilantro (optional)
oil

Instructions:
Place 1 flour tortilla on plate, Arrange avocado slices on tortilla.  Spead cheese over avocado.  Sprinkle with salsa and cilantro.  Top with second tortilla.

Brush small shillet with oil and heat.  Gently ass quesadilla and cook over medium heat until browned on bottom, 3 to 5 minutes.  Gently flip using a wide spatula.  Brown second side, about 2 minutes.  Remove from skillet.  Cut into quarters & serve.  Makes 2 servings.
