| Submitted by: Diane Lalicki July 2001 Spicy and delicious. Ideal on penne pasta. Ingredients: 1 tsp olive oil 1 C chopped onion 4 cloves garlic, minced 1/4 C and 2 Tbsp red wine 1 Tbsp white sugar 1 Tbsp chopped fresh basil 1 tsp crushed red pepper flakes 2 Tbsp tomato paste 1 Tbsp lemon juice 1/2 tsp Italian seasoning 1/4 tsp ground black pepper 2 (14.5 oz.) cans peeled and diced tomatoes 2 Tbsp chopped fresh parsley Directions: 1. Heat oil in a large skillet or saucepan over medium heat. Saute onion and garlic in oil for 5 minutes. 2. Stir in wine, sugar, basil, red pepper, tomato paste, lemon juice, Italian seasoning, black pepper and tomatoes, bring to a boil. Reduce heat to medium, and simmer uncovered about 15 minutes. Top with fresh parsley. |
