| High Fiber Nutritious Oatmeal Cookies 2 small (or 1 large) very ripe bananas 1 cup whole wheat flour 1 cup all-purpose flour 3/4 teaspoon baking soda 1 / 2 teaspoon nutmeg 3/4 cup raisins Walnuts (optional) 2 cups unsweetened applesauce 3 tablespoons margarine 2 eggs or Egg Beaters 2 teaspoons vanilla 2 cups oatmeal 1/2 teaspoon cinnamon Preheat oven to 350 degrees. Combine bananas, applesauce, margarine, eggs, and vanilla. In large bowl, mix together oatmeal, flours, baking soda, salt, spices, and currants or raisins. Add combined fruit mixture to dry ingredients until just blended. Drop by rounded tablespoonfuls onto ungreased cookie sheets. Bake for 25 min utes or until light golden brown. Makes 40 cookies. |
