| Butter Wafers 1 / 2 cup soft butter 1 / 2 teaspoon vanilla extract 1 / 2 teaspoon vanilla extract 1 / 3 cup sugar 1 / 3 to 1 / 2 teaspoon cinnamon (optional) 1 egg 1 / 8 teaspoon salt 3/4 cup sifted all-purpose flour Cream butter until fluffy. Add vanilla extract, sugar, and egg. Beat thoroughly. Blend in flour and salt. Mix well, but do not over mix. Drop from tip of teaspoon onto greased cookie sheet. Bake in a moderate oven at 350 degrees for about 10 minutes or until edges are delicately browned. Remove from pan while hot. Cool on cake rack. Standard: Thin; outer edge tinged with brown; crisp; tender; very pleasing, rich flavor. Makes 30 to 35 cookies. |
