| Pioneer Picnic Cookies 2/3 cup softened butter 1 cup white sugar 2 eggs 1 / 2 teaspoon baking soda 12 ounce-package semi-sweet chocolate chips 2/3 cup shortening 1 cup light brown sugar 1 tablespoon vanilla extract 3-1 / 4 cups all-purpose flour 1/2 teaspoon salt 1-1 / 2 cups chopped walnuts Blend butter and shortening until smooth and fluffy. Add both sugars and cream well. Add eggs, beating well. Stir in vanilla. Mix dry ingredients and gradually add to batter. Add chocolate chips and nuts. Mix well and drop by teaspoonfuls onto ungreased baking sheets, about 1 inch apart. Bake at 375 degrees for 8 minutes. Cool briefly on baking sheet, then remove to cooling racks. Store in airtight container. Yields about 7 dozen 2-inch cookies. |
