Ingredients
2 in cube ginger chopped 8 cloves garlic peeled
4 tbsp water plus 1/2-3/4 pint 10 tbsp oil
2lb lamb or beef cubed 10 cardamon pods
2 bay leaves 6 whole cloves
10 peppercorns 1 in stick cinnamon
7oz onions finely chopped 1 tsp ground coriander
2 tsp ground cumin 4tsp paprika mixed with 1/4-1 tsp chilli
1 tsp salt 6 tbsp yoghurt
1/4 tsp garam massala
Method
* Blend ginger and garlic with 4 tbsp water (or just chop finely)
* Brown meat cubes in small batches in the oil. Drain
* In same pan, add cardamon bayleaves, cloves, peppercorns and cinnamon and wait till the cloves swell (a few
secs)
* Add onions and fry for 5 mins. Add coriander, cumin, paprika - chilli and salt
* Stir fry for a few secs and add meat
* Add yoghurt a tbsp at a time, stirring in between
* Add 1/2 pint water for lamb, 3/4 for beef. Stir well, cover and cook 1 hour for lamb, 2 for beef. Stir every so often till cooked
* When meat tender, take off lid and boil away liquid till thick
* Before serving, spoon off all the oil that should be floating on the surface
