Ramja - Red Kidney Bean Stew

 

Ingredients

Tin of Red Kidney Beans (or other bean - black-eye, cannelini, chick peas...)
1 tbsp yoghurt 
8 oz canned tomatoes
2 medium onions 
small piece ginger
2 cloves of garlic 
1 green chilli
1 tsp cumin seeds 
1/4 tsp mustard seeds
1/4 tsp onion seeds 
1 tsp ground coriander
1 tsp garam massala (or mixed spice) 
1 tsp salt
1/2 tsp turmeric 
1/2 tsp chilli powder
 

Method

* Liquidize onion, garlic, ginger, green chilli - or just finely chop
* Heat some oil in a pan. Add the three seeds and wait till they pop. Add onion mixture and fry 5-10 mins till browned
* Add powdered spices and stir
* Add yoghurt and tomatoes and stir for 5 mins
* Add beans, stir and cook for 30 mins don't let it go dry and burn!. Sauce should thicken
* Sprinkle with fresh coriander if there's some lying around
