I must be recovering. At noon today I returned to the house famished after a computer session with some seniors. I felt a specific food craving, a craving I don't often feel.

Potatoes. Fried. With onions, green peppers, salt, black pepper. And grease.

Two medium potatoes didn't look like enough. Three looked about right.

So I chose four.

I heated a little light olive oil in a non-stick, 12-inch omelet pan while I grated the taters. The combined gratings filled the pan, but they would cook down to make room for sausage if I were to add some later. Today, I skipped the sausage.

Half an onion, coarsely chopped.

Who are you going to kiss today? A whole onion would be better.

Cook uncovered, the better to inhale the aroma, and monitor the color of the potatoes. It kept the potatoes from getting soggy, too. Cook 'til golden brown.

Stir occasionally. The potatoes, I mean.

When the potatoes were cooked thoroughly, and the color was right, I added a handful of chopped bell, anaheim, and banana peppers from last summer's crop. Using my own peppers helped take the edge off a gray winter day.

Continue to stir until the peppers are warm, but stop before the bright green peppers turn olive and lose their crunch.

I emptied the pan into the nine-inch pyrex pie plate that I decided to eat from. Add grated cheese if you like. Today, grated pepper jack for me.

Gorge yourself with gusto and a fork (could be a line from Robert Service -- sorry). Enjoy your private gluttony.

Some sleet started to fall at about 10 PM last night. Overnight, the sleet turned to snow. Not enough to call school off. not even enough to shovel from the walks. Just enough to dust the yards and cars.
