MEXICAN RESTAURANTS
Mexican food is nearly as ubiquitous here as Chinese food.  The difference is that Mexican restaurants tend to be smaller and serve a limited range of foods.  When my Mexican friends invite us over for dinner, we eat all sorts of food.  But most Mexican restaurants seem to be limited to burritos, tacos, etc.  I've been told that Mexican food as it is popularly known here is primarily eaten in the northern parts of Mexico and has a heavy Indian/Native American influence.  Of course, this is just what I've heard.  I don't claim to be an expert in Mexican food, so you'll find a layman's evaluation of Mexican food here.  One thing I have found that many restaurants are "good, but not spectacular."  This doesn't mean that they are bad restaurants (those are the ones with the "Must practice Iron Stomach Kung Fu" rating).  I'm not trying to discourage you from going there.  I still like eating in those places and return to them every now and them.  I'm just saying that in comparison to others, they aren't as good.
