Thai Omelette |

1. eggs 3 2. fish sauce 1-2 tablespoons 3. cooking oil 2-3 tablespoons 4. chopped green onion 2 tablespoons (optional) 5. chopped pork, shrimp, or crab 1/2 cup (optional) 6. red or green chilli pepper (optional) take off seeds and slice
Alternative: If you are a vegetarian or don't like the smell of fish sauce, use white soy sauce instead. |

Preparation: |
|
|
|
|
1. Whisk the eggs in a bowl until they are well-mixed. 2. Add fish sauce. 3. If you like meat, add chopped-pork, chopped shrimp, or crab meat and whisk. 4. If you like, add the chopped green onion. 5. Put cooking oil in a frying pan, and leave it on for 1/2 minute. 6. Pour the mixture in a pan. Moving the pan around a little so the mixture does not form a thick layer. 7. Leave it on for 1-2 minutes, then turn the omelette upside down and leave it about 1-2 minutes.
Tip : Olive oil adds nice flavor to this dish. Thai omelette is a little bit oily. Cooking with less oil will lessen its taste.
