Heart with Cream - By Cho Chang 1

For : 8 servings
Time : 2 hours
You need :
1. 3 eggs
2. 90g sugar
3. 90g flour
4. 4 sheets of gelatin
5. 75cl liquid cream
6. 500g strawberries
7. 5 Tsp sugar

Follow these steps to prepare this Heart with Cream :

1. Prepare all the ingredients mentioned above.

2. Prepare the genoise using 3 eggs, 90g sugar and 90g flour. Whisk the eggs and sugar in a metal bowl over a bain Marie. The temperature of the mix should reach about 40�C (104�F).

3. Keep whisking until fully cooled.
You can use either a regular whisk or a hand mixer.

4. Combine gently the sifted flour, using a wooden spatula or a skimmer and stirring in a circular pattern.

5. The genoise will now look like the picture shows here.

6. Bake the genoise pastry in a heart-shaped silicone mold...

7. ...in hot oven 180�C for 20 minutes.

8. Soak the sheets of gelatin in cold water to soften them. Mix the strawberries to obtain a coulis and slightly warm it with sugar. Drain the gelatin and add it to the warm coulis. Mix using a whisk.

9. Leave to cool. Note that the gelatin does not harden. The coulis must remain liquid but has to be cold. Beat the liquid cream into whipped cream.
10.  Delicately add the whipped cream to the strawberry coulis.

11.  Cut the thickness of the genoise in two.

12. Stuff the genoise.

13. Smooth and level the edges with the cream.

14. Decorate the surface of the cake using a  pastry bag...

15.  ...and a few fresh strawberries.

16.  Store in the fridge for a minimum 1 hour
       before serving
