Rice Bread

Makes 1 loaf.

AmountIngredients
1 cupcooked rice
1 cupmilk
2eggs
1/4 cupmelted butter
1 tspvanilla extract
1/2 tspsalt
1 Tbspbaking powder
1 tspbaking soda
1/2 cuprice flour
1/2 cupall purpose flour

In a large bowl, mix all ingredients except the flours. Slowly and gradually add flours until well mixed. Consistency should be the same as a wet dough.

Poor mix into a buttered loaf pan. Bake in pre-heated oven at 325� F for 40 minutes. When done, knife inserted in center will come out clean. Cool in pan for 10 minutes, then turn out on rack to cool at least half an hour before slicing. (Bread continues to cook as it cools; do not slice too early as the bread will be clumpy and fall apart.) Serve warm with a pat of butter.
