Rhubarb Crumble
Ingredients

400g/14oz rhubard, cut into chunks
85g/3oz granulated sugar
1 tsp cornflour

For topping:

100g/4oz plain flour
85g/3oz caster sugar
85g/3oz butter

Serves 6


Preheat the oven to 180c/350f/Gas 4.  Mix the rhubarb with the sugar and cornflour.  Transfer to a medium/large ovenproof dish.

Mix the flour and sugar in a bowl.  Rub in the butter to resemble breadcrumbs.  It doesn't matter if this mixture looks too lumpy.  It adds to the look of the dish.

Spoon this crumble mixture over the rhubarb until it is all covered.  Bake for 30-35 minutes or until golden and bubbly.



This dessert is great served warm from the oven with pouring cream.  Or serve it cold with hot custard.
